For Readers of Romance - Lemon Cookie Squares |
There's nothing better than settling into your favorite chair or recliner or sofa with a cup of herbal tea, hot or cold, and something sweet and reading a sizzling, heart-rendering story of love, and or lust depending on preference.
Here's an easy treat to make ahead of time just for those occasions when we can escape a world where the news lately never seems to be all that good what with gas and food prices steadily rising. Sensual romance stories along with creamy-crunchy lemon cookies will fit that bill!

LEMON COOKIES SQUARE
1-1/3 cups white chocolate chips
1/2 cup (1 stick) butter
2 teaspoons grated lemon zest
1-1/3 cups coursely crushed lemon creme sandwich cookies
1 cup chopped pecans, preferably skillet toasted and cooled -------------------------------------------------------------------------------------------
Line an 8x8x2-inch pan with foil; lightly spray with nonstick cooking spray. Set aside
Place the white chocolate chips and butter in a medium saucepan, set over low heat. Cook and stir until the white chocolate is completely melted.
Remove from the heat; stir in zest, cookies, and pecans, mixing well. Quickly spread mixture into prepared pan.
Refrigerate bars 3 hours or until firm. Cut in 16 squares. Store in covered containers between layers of wax paper. Make 16 squares. __________________________________________________________________
